I received a response from a CA that they are accepting my pay for deletion request. In addition to a cashier's check and sending it certified mail, is there anything else I need to include? Another letter reiterating the agreed terms and what is expected of them next?

Do you have a letter on letterhead from them that states that they agree to pay for delete? That is what you need. I would write a letter to them stating that upon receipt of your payment they will send letters to the CRAs requesting deletion. ask them to send a copy of this letter to you. this is normal procedure
